Our Story
Growing up in a military family, owner, Kevin Clark had the opportunity to live in many different areas - Texas, Panama and South Carolina – allowing him to experience a variety of food styles.
Kevin has always loved cooking for friends, family and co-workers at holiday parties, family BBQ’s and potlucks over the years. While working at Bath Iron Works, he and a co-worker started smoking food over many weekends and bringing in left overs to share with their team. They loved trying new recipes and outdoing each other. They also joked about “quitting their day job” and starting a food truck. Through this process, Kevin developed a great passion for smoked food.
After some changes to his team at BIW, and the loss of his father, Kevin knew he needed a change. Using his construction skills he had gained over the years, he bought an empty contractor trailer and set about making it into a Food Truck. Several months later, in fall of 2024 Smokin’ Pig was born!
Smokin’ Pig serves a mix of Texas and Carolina, which Kevin affectionately calls “Maine Style” BBQ. The menu has a Tex-Mex flare with items like Street Corn Mac and Cheese and Pulled Bork/Brisket Tacos with Corn Salsa and Pico. Kevin enjoys trying to have people step outside of their comfort zone and try some new flavors. However, for the less adventurous, all the traditional BBQ favorites are available too!
